Healthy “Junk Food” Recipe for Lockdown!

Healthy Junk Food

During this (forever) extended lockdown period we are all craving some good old junk food.
This may sound like an oxymoron, but it is in fact possible to make your favorite junk food a little bit healthier by simply swapping some ingredients for something healthier. If swapping your fries for a salad is too much of a leap, even swopping normal potatoes for sweet potatoes is a good place to start. Using an Air fryer to cook your potato or sweet potato fries in is also a great way to cut on fat!
This is a tried and tested recipe where you add some chopped mushrooms to the meat in the burger patties, to cut back on calories and saturated fat as well as the sweet potato fries mentioned earlier. Ingredients
2 large sweet potatoes cut lengthwise into your preferred chip size
2 teaspoons olive oil
350g lean beef mince
1 cup finely chopped fresh button mushrooms
4 whole-wheat hamburger buns
1 tablespoon light mayonnaise
1 tablespoon mustard
4 lettuce leaves
2 tomatoes, sliced
½ cup sliced red onion

Directions
Step 1
Preheat oven to 180 degrees C. Coat a large rimmed baking sheet with cooking spray.

Step 2
Toss sweet potatoes with oil and salt and pepper to taste in the prepared pan. Bake, turning occasionally, until tender and brown, around 20 to 25 minutes. (Or cook in Air fryer)

Step 3
Meanwhile, combine mince, mushrooms, and some salt and pepper in a medium bowl. Shape the mixture into 4 patties, about the size of your burger buns.

Step 4
Heat a frying pan with some olive oil. Cook the burgers, covered, turning once, until cooked, about 8 to 10 minutes total.

Step 5
Combine mayonnaise and mustard in a small bowl. Spread the buns with a light margarine/butter and top with the patties, lettuce, tomatoes and onion. Serve with the sweet potatoes and the mustard mayo sauce for dipping.
